(ii) Ripening
(iii) Pre-cooling
(iv) Sorting Respiration
(vi) Canning
(vii) Dehydration Discuss health benefits of fruits and vegetables.
2. Write short notes on any four of the following:
Controlled atmospheric storage. Vapour heat treatment Surface/wax coating Use of growth regulators in PHM of fruits and vegetables. Maturity index Post harvest diseases of fruits and vegetables.
3. Enlist the various steps involved in handling of the harvested produce and explain any two of them.
Describe the role of storage temperature in harvested produce.
4. Classify the food based on pH or acidity.
Enlist the various types of fruit juices and beverages and explain any two of them.
